Spiced Rum-Nut Brittle Recipe
Seasoned with capsicum pepper and nutmeg, this delicious microwave weak from Terri McKitrick features its own heat and heats up up holiday visitors to her Delafield, Wi home. It also makes a great storing stuffer!


    1 cup sugar
    1/2 cup mild maize syrup
    1/2 cup sliced cashews
    1/2 cup sliced pecans
    1 tsp. butter

    1/2 tsp. floor cinnamon
    1/4 tsp. cayenne spice up pepper
    1/8 tsp. salt
    Touch floor nutmeg
    1 tsp. cooking soda
    1/2 tsp. rum extract
    1/2 tsp. vanilla flavor extract


    Butter a 15-in. x 10-in. x 1-in. pan; set abaye.
    In a 2-qt. microwave-safe dish, merge glucose and maize syrup. Microwave, discovered, on great for 3 minutes; mix. Microwave 2-1/2 moments longer. Stir in the cashews, pecans, butter, nutmeg, cayenne spice up, sodium and nutmeg.
    Microwave, discovered, on great for 2 moments or until combination changes a mild ruby color (mixture will be very hot). Quickly mix in everyday and ingredients until mild and foamy. Instantly add into prepared pan; propagate with a steel spatula. Awesome completely. Break into pieces; store in an air-tight package. Yield: 1 lb.
