Pistachio Brittle Recipe

    1 cup sugar
    1/2 cup mild maize syrup
    1/8 tsp. salt
    1 tsp. butter
    1/2 cup shelled natural pistachios
    1 tsp. cooking soda
    1 tsp. vanilla flavor extract


    In a 2-qt. microwave-safe dish, merge glucose, maize syrup and salt. Microwave, discovered, on great for 3 moments. Mix. Microwave 2 moments longer. Mix in butter and pistachio nuts. Microwave on great for 30-60 seconds or until combination turns a mild ruby (it will be very hot). Quickly stir in everyday and vanilla flavor until mild and foamy. Instantly add onto a oiled cooking piece and spread out. Chill for 20 moments or until firm; break into small pieces. Store in an air-tight package. Yield: 3/4 lb.
