Grandma's Christmas Brittle Recipe
Whenever my granny was in your kitchen, everything had to be "just so" to assurance her time-tested results. Viewing her make this weak is one of my preferred remembrances, and I'm grateful I can successfully transfer this delightful recipe


    3 glasses sugar
    1/2 cup light maize syrup
    1 cup water
    1/4 cup butter, cubed
    1 tsp. salt
    1 jar (16 ounces) saltless dry cooking peanuts
    1-1/2 tsp cooking soda
    1 tsp. water
    1 tsp. vanilla flavor extract


    Oil two cooking linens and keep warm in a 200° range. In a large pot, merge the glucose, maize syrup and 1 cup the water. Cook over method warm, mixing regularly, until a sweets temperature gauge gets to 240° (soft-ball stage). Mix in butter, salt and nuts. Continue heating, mixing regularly, until the combination gets to 300°.
    Meanwhile, merge the everyday, 1 tsp. the water and vanilla flavor. Remove pot from the warm. Mix in everyday combination. Quickly add half the combination over each cooking sheet. Spread with a buttered metal spatula to a 1/4-in. width. Cool. Break into pieces. Store in an air-tight package. Yield: about 2-1/2 pounds.
